Red Rock Canyon: Viva Las Vegas!

As a busy working professional, sometimes it’s important to kick back, relax and book a flight to an exciting destination. In my case, fabulous and sunny Las Vegas, Nevada was the way to go. Between the ambiance of lavish hotels, delicious buffets and restaurants, how could you go wrong?

When people think Las Vegas, the first thing that comes to mind is a fast lifestyle and gambling. Of course the strip has a variety of upscale hotels like the Bellagio, and amazing Circque Du Soleil shows like Beatles Love, to choose from but what many don’t realize is how beautiful the surrounding towns are.  

Summerlin, Las Vegas has so much to offer. Red Rock Resort Spa and Casino is owned by Station Casinos on 70 acres located in Summerlin, Nevada. Red Rock is home to great restaurants, the Yard House to name one and they even have an outdoor concert Hall. Not to mention Red Rock Canyon itself. There are also shopping villages like Tivoli Village and Boca Park. All of the restaurants in these villages offer happy hour specials so you can eat high-end meals without breaking the bank. The Panini Café is Summerlin’s best-kept secret. This Israeli European style restaurant brings in tourists from all over the world! I had the privilege to dine with Chef Avi Mantsur. He shared with me some of the restaurants specialties such as Ziva, a puffed pastry topped with sesame seeds and filled with mozzarella and tomato sauce, Mushroom Hummus and Salmonini Seared Salmon filet served with sautéed vegetable and mash potato. At the Panini café the food is prepared with love.  

As beautiful as Long Island is, sometimes it’s nice to get off the Island and visit a desert full of mountains, charm, amazing food and bright lights.  I urge everyone to take time away from their every day life and go somewhere new.
