Frank Brigtsen's Mission Statement: “Our Commitment to Quality” At Charlie’s Seafood, we buy fresh and local fish, shrimp, oysters, and crabs. We buy the BEST – because YOU deserve it. We buy wild-caught Des Allemands catfish or Louisiana farm-raised catfish that is “deep-skin cut” for cleaner, sweeter flavor. We buy chemical-free, wild-caught Gulf of Mexico shrimp, the best in the world. No imports. We buy “unwashed” Louisiana oysters for honest natural flavor that isn’t watered down. We buy live crabs from Lake Pontchartrain and fresh, locally caught and processed crabmeat. No imports. Our food is made from scratch by Chef Ronald Prevost, Chef Gabriel Beard, and a team of dedicated professionals. Cane River native Janet Caldwell makes her Cane River Meat Pies® fresh, by hand, right here in our kitchen. Our Roast Beef is slow-cooked for 8 hours to produce a rich, flavorful natural gravy.
